Feijoa Super Loaf
This delicious super food loaf is perfect with New Zealands seasonal Feijoa, of course you can change to any other fruit combination you like.
Ingredients
- 50g of dairy free butter like Nutlex or Olivani
- 4 Tblsp of your choice of Sweetener, I did use Stevia
- 1 cup of peeled Feijoas diced into chunky pieces
- 1/2 cup of Medjool Dates diced into chunky pieces
- 1/2 cup of chopped Walnuts
- 1/3 cup of Chia Seeds
- 1 Tblsp of Ginger, or 5 drops of Doterra Ginger oil
- 1 dspn Baking Powder
- 1 dspn Baking Soda
- 2 tsp Vanilla
- 4 Egg replacements. I use http://www.orgran.com/products/no-egg-egg-replacer/
- 1 1/2 cup Almond Flour
- 1/2 cup Buckwhet Flour
Method
Combine diced Feijoas and Dates into a bowl.
Melt the dairy free butter and sweetener, put aside to cool.
Combine all the dry ingredients in a large bowl and add the diced fruit to coat.
Add cooled liquid and stir to just combine, you may need a little bit of nut-milk to make it a bit more wet.
Place into a lined loaf tin.
Sprinkle some toasted cocnut on top.
Cook for 35mins at 180 degrees.
