Chocolate peanut butter fudge

Ingredients:

  • 3 heaped cups of sulfate free desiccated coconut
  • 500g of 100% peanut butter - smooth
  • 3/4 cup of melted coconut oil
  • 1/2 cup of maple or agave syrup
  • 1/2 tsp. Himalayan salt

 

Ganache Topping

  • 1/4 cup of melted cacao butter
  • 1/3 cup raw cacao powder
  • 1/4 cup of maple or agave syrup

 

Method:

  1. Place desiccated coconut into a food processor and process until smooth and a liquid consistency.
  2. Add remaining ingredients and pulse until thick and incorporated completely.
  3. Line a small tray (about 20cm square) with a bit of coconut oil and baking paper (or cling wrap if you have none) and gently press the in the mixture evenly.
  4. Refrigerate  for 15 minutes while you make the ganache.

 

Ganache Topping

  1. Combine cacao butter, cacao and syrup in microwave or over double boiler until melted and whisk until smooth. Cool slightly.
  2. Pour out evenly on top of the slice and store in the fridge until ready to serve.
  3. When cold, run a knife around the edges of the slice to make it easier to remove and then  lift the slice out by the edges of the baking paper.
  4. Cut into Squares or bars.
